If you ever have leftover apple sauce, our Zesty Speculaas makes these Apple Breakfast Muffins a little more special! My kids love them with chocolate chips, but those are completely optional.

Ingredients:

2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butter, softened
1 cup white sugar, or use coconut sugar for a low sugar option
2 eggs
1.5 tsp Zesty Speculaas blend
1 tsp vanilla extract
1.5 cups applesauce - feel free to use a blended apple sauce or a chunky one

Method:

Preheat oven to 375.

Whisk together flour, baking powder, baking soda, Zesty Speculaas and salt in a medium bowl. In a large bowl, cream together butter, sugar and eggs until smooth.

Mix the applesauce into the batter and slowly stir in the flour mixture until fully combined. Scoop the batter into a greased muffin pan, it should make 12 muffins.

Bake 30-35 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
