Charmoula is a Moroccan paste that is used to marinate everything from kabobs, to fish filets, to eggplant. At it's core, it is a mix of paprika, spices, herbs like cilantro and parsley, and an acidic element like lemon. Our Moroccan Ras el Hanout pairs deliciously with it, and a little goes a long way.
INGREDIENTS:
- 2 cloves garlic, crushed
- 1 tsp Spice Tree Organics Moroccan Ras el Hanout
- 1 tsp crushed red pepper (optional)
- 1 tsp sweet paprika
- 2 tbsp finely chopped preserved lemon peel (see note)
- 1/3 cup olive oil
- 2-3 tbsp lemon juice
- 1/4 cup mixed herbs, like cilantro, parsley, and mint
Note: If grilling, do not include the chopped preserved lemon in the marinade. Instead, mix the 2 tbsp chopped preserve lemon with 2-3 tbsp olive oil and a pinch of salt, and spoon the preserved lemon oil on top of whatever you've grilled.
