We love these subtly spiced buttery cookies, traditionally made just with vanilla. The Zesty Speculaas in the dough and powdered sugar give it a deliciously warming taste.
For the cookie dough:
2 cups all-purpose flour
1 pinch of salt
2 sticks unsalted cold butter, cut into small cubes
3/4 cup powdered sugar
3/4 cup ground almonds or hazelnuts or walnuts
1/2 tsp vanilla extract
2 tsp Zesty Speculaas spice
For the sugar mixture:
3/4 cup powdered sugar
1 tsp Zesty Speculaas spice
METHOD:
In the bowl of a mixer fitted with the paddle attachment, combine flour, salt, cold cubed butter, powdered sugar, nuts, vanilla extract and Zesty Speculaas spice. Mix at medium speed until a crumbly dough forms, about 1-2 minutes.
Use your hands to press the dough together and wrap it in plastic wrap. Chill for one hour in the fridge.
Preheat the oven to 350°F (177°C) and line two baking sheets with parchment paper.
Roll out the chilled dough and use the cutter of your choice to cut the cookies. Transfer them to the baking sheet. Refrigerate the dough if it gets too soft.
Bake the cookies for 12 to 15 min, until the edges are golden.
Combine powdered sugar with the Zesty Speculaas spice and sift the mixture over the cookies. Let them cool completely then give them a second dusting.
