Nothing beats a good ole fajita fiesta! Alongside by chicken or beef fajitas I often make Cuban style black beans and rice. Some like to eat it alongside their protein while others throw it into the tortilla for a delicious and super filling meal.
INGREDIENTS
1 15oz can of black beans
1 small onion, chopped in small pieces
1 small green pepper, chopped in small pieces
1 Tbs Spice Tree Organics Southwest Taco & Fajita Blend
1 cup white rice
Salt to taste
INSTRUCTIONS
Cook the white rice in a small pot using your usual method.
On medium heat saute the chopped onion and green pepper in a small pot for five minutes. Once the onion is translucent add the can of black beans, spice blend, and salt. Cover and cook for 10 to 15 minutes stirring occasionally.
Once the black beans and the rice are done cooking, mix the two together. Garnish with cilantro.
